Homemade Tzatziki
We have all we need for this delicious Greek dish home grown so how could I not make it; its so easy. The ingredients measure I have given are only a guide. Make yours to your individual taste altering the fresh herbs, garlic or the amount of yogurt etc. I have been told a traditional Greek tzatziki has a dash of vinegar and not lemon so enjoy experimenting.
Ingredients
500g tub of Greek yogurt. 1 - 2 cucumbers. Salt/pepper. Lemon juice. Olive oil. Fresh herbs (parsley, mint or dill). 1 garlic clove.
1. Peel and grate the cucumber. Sprinkle over a teaspoon of salt and leave for 10 minutes to draw out the liquid.
2. Squeeze / drain off the liquid using a sieve or muslin cloth.
3. In a bowl mix the cucumber, yogurt, a crushed clove of garlic, one squeeze of lemon and a handful of chopped fresh herbs. I used parsley and mint. Add pepper to taste.
Serve with a drizzle of olive oil and decorate with olives. Enjoy with warm flat bread or with zucchini balls.
