Its time to pick oregano for drying; distinctly pungent and slightly peppery. Its a hardy perennial and seeds its self, so easy to grow your own. Or forage for any that may be growing wild.
A close related herb is Marjoram; slightly milder flavour floral and woodsy. (also known as the poor mans oregano).
A family of villagers sit together in the shade to strip the stems of any leaves and then tie them into bunches and hang to dry.
Once fully dried strip the herb from the stem over some paper and grind between fingers and thumb. Your home will smell amazing.
Seal in an airtight jar. Add a nice label to make this a simple and lovely gift.
Delicious sprinkled over a Greek salad, bbq meats or infused in olive oil for a salad dressing.
