Spicy Tomato Salsa


With an abundance of cherry tomatoes ripening its time to get a little more creative. We love a tricolor salad (tomatoes, fresh basil and mozzarella cheese with a drizzle of balsamic vinegar) and freshly picked tomatoes in a bowl to snack on. But a spicy tomato salsa will give your zucchini balls/ bbq meat a little kick.

Ingredients
Fresh washed tomatoes, red pepper, chilli (fresh of flakes), fresh coriander, red onion, olive oil, splash of vinegar  and garlic clove. All ingredients are optional and quantities are depending on personal taste.
1. Chop all vegetables finely.
2. Place in bowl and add olive oil, vinegar and chilli and mash with a potato masher. I like a slightly chunky texture.
3. Put in fridge for 30 mins before serving.

Top tip. - if you use a hand blender only give it 2 seconds as the mixture will become too pale and frothy.
